New appointments will help Otley pub develop gastro-pub facilities

A Wharfedale brewery has made two appointments it believes will deliver an “unrivalled” gastro-pub experience in Otley.

WharfeBank Brewery has installed Simon Miller as head chef and Oliver Renton as manager of The Fleece in Westgate.

Mr Miller gained his experience working alongside Ilkley’s The Box Tree restaurant’s Michelin starred chef, Simon Gueller, and celebrity chef Marco Pierre White.

He said: “I’m excited about the new challenge at The Fleece, and I’m keen to bring the quality of fine dining food to a great local pub for a fraction of the cost.”

Mr Renton, meanwhile, has managed family-owned bars The Red Lion at Burley-in-Wharfedale and the Craven Heifer at Addingham. He also learned about the care and attention needed to brew good cask ales while working for WharfeBank before gaining his position at The Fleece.

He said: “I am determined to ensure customers are served the highest quality real ales, which complement the great food and drink on offer.”

The pair will start at the pub, which WharfeBank transformed and re-opened in March 2011, on November 8.
